During the Gouda Cheese Awards, delicious dishes were created by Koksvisie's cooking team with the winning cheeses 2020. Through these recipes, you can now make the dishes at home too!

Pesto with goat cheese Saantje

Ingredients (for 4 persons)

  • 25 gr. Fresh basil
  • 20 gr. Pine nuts
  • 20 gr. Walnuts
  • 3 dried apricots
  • 25 gr. Goat's cheese Saantje
  • 1 clove of garlic
  • 3 dl. ripe olive oil
  • Pinch of salt/pepper

Preparation method:

  • Grate the goat cheese and peel the garlic.
  • Put all the ingredients (except the olive oil) in a food processor.
  • Turn on the blender and gradually add the olive oil until a green pesto is formed.
  • The pesto goes wonderfully with bread as a dip/ pasta dishes/ cheese board etc.

Breadsticks with Rouveen's Roem

Ingredients (for 4 persons)

  • 4 slices of casino bread/ white or brown
  • Olive oil
  • 1 pack of raw ham
  • Bunch of honey tomatoes
  • 100 gr. Roeveens Roem
  • Aïoli
  • Black olives
  • Italian dried herbs (1 tablespoon)

Preparation method:

  • Preheat the oven to 180 degrees.
  • Remove the crusts from the bread and cut the bread into wide strips of about 1.5 cm each. Coat the bread strips with olive oil and add Italian dried herbs.
  • Bake the sticks golden and crispy in the oven for about 10 minutes.
  • Meanwhile, cut small pieces of about 1 cm of the raw ham/honey tomatoes/Roeveens Roem/ olives.
  • Remove the sticks from the oven and let them cool.
  • Just before serving, coat the sticks with the small sliced raw ham/ aïoli/ Roeveens Roem/ olives and the honey tomatoes. Make a nice little pattern.

Lukewarm tartare of honey/ prawn/ goat cheese Nora

Ingredients (for 4 persons)

  • 500 gr. Peeled raw prawns
  • 1.5 tablespoons of olive oil
  • A clove of garlic
  • Fresh dill
  • 1 lime
  • 1 lemon
  • Pinch of salt
  • 50 gr. Goat's cheese Nora
  • 1 tablespoon of honey

Preparation method:

  • Preheat the oven to 120 degrees
  • Cut the prawns small, as finely as possible.
  • Then also cut the dill and cheese as small as possible.
  • Shave the zest of ¼ lime and ¼ lemon, and squeeze a teaspoon of lime juice.
  • Press the garlic and then add the pressed garlic to the lime juice and citrus shavings. Also add the prawns, cheese and dill.
  • Put everything in a bowl and add the tablespoon of honey to this as well. Stir everything well and season with a pinch of salt.
  • Take the baking tray and put greaseproof paper on it. place the kitchen on the tray.
  • Divide the mixture among the 4 kitchen rings and gently press it with a cocktail masher.
  • Remove the rings and place the tartlets in the middle of the oven.
  • Heat the dishes in the preheated oven for 10-12 minutes so that the prawns are cooked. Check every now and then!
  • Remove the griddle with the tartlets from the oven and place the tartlets on a plate, finish with pickle lettuce/ toast and a mild honey mustard dressing.
