The taste of time: how maturing gives Gouda cheese character
Why does a young cheese taste so creamy and mild, while an old cheese is tangy and grainy? It has everything to do with maturation. Or more precisely: with patience. During the ripening process, Gouda cheese is given time to develop. Flavours deepen, textures change and aromas develop that you won't yet find in a fresh cheese.

From the barrel to your plate and everything in between
Ripening starts as soon as the cheese comes out of the barrel. Then it goes into a special room, where temperature and humidity are carefully balanced. Here it lies dormant for weeks or even more than a year. But in the meantime, all sorts of things happen.
The cheese loses moisture, making it firmer. Proteins are slowly broken down, fats develop new flavours and in older cheeses even small crystals form, providing a slight crunch. The longer it ages, the more pronounced the flavour.
Young, mature, old: what's the difference?
There is no "one-size-fits-all" when it comes to cheese. One Gouda cheese is soft and creamy, the other tangy and spicy. That difference lies largely in the ripening time. The longer a cheese lies, the more it changes in taste, smell and texture.
- Young cheese (approximately 4 weeks of maturation)
The iconic young Gouda cheese is soft, mild and unctuous. This cheese is popular on bread as a traditional Dutch lunch and loved by children. - Mature cheese (4 to 6 months)
Mature cheese is firmer and fuller in flavour. This makes it perfect for hot dishes or as a warm-up on a cheeseboard. - Aged cheese (10 to 12 months or longer)
Aged cheese is drier, spicier and has more character. Perfect to eat like this with a good glass of wine or grated over mashed potatoes or pasta, for example.
Each age has its own application. Whereas young cheese does well on a sandwich, an old cheese is ideal as an appetiser or flavouring.
