Why does Gouda cheese smell so different (and therefore so delicious)?

Anyone who has ever tasted a piece of Gouda cheese knows that the smell is sometimes as tempting as the taste. But what surprises many people is how much difference there is between young and old Gouda. One smells fresh and creamy, the other intense and spicy. Why is that actually the case, and what does that smell tell you about the cheese you are about to taste? In this blog, we dive into the fragrant world of Gouda cheese together.

Smell is the first introduction

Even before you take a bite, the smell of cheese gives you a taste of what to expect. Our sense of smell is faster than our taste buds. A young Gouda often has a soft, milky smell almost reminiscent of butter or yoghurt. An old cheese, on the other hand, can fill an entire room with nutty, spicy aromas. That smell is a direct reflection of the ripening process that has taken place over months or even years.

The role of maturation

Maturation is the secret behind the huge aroma variation in Gouda cheeses. Young cheeses have only had a few weeks to develop and therefore remain mild and light. An aged cheese matures for at least half a year, creating deeper, more caramel-like scents. An aged cheese is sometimes given years, yielding complex, spicy notes that are almost spicy. The longer the ripening, the more intense the aroma.

A little cheese nose guide

How do you recognise the different aromas? Your nose will help you on your way:

  • Young Gouda: Smells of milk, cream and butter, light and fresh.
  • Belegen Gouda: Warm notes of nuts and caramel.
  • Old Gouda: Tangy, spicy, sometimes with a hint of crystalline salt.
  • Herbal cheeses: extra layers of cumin, truffle, basil or other spices.

That way, in addition to being a tasting for the mouth, a cheese board suddenly becomes a journey of discovery for your nose.

Smell and experience belong together

At the Gouda Cheese Experience, you won't learn all this from a booklet, but in an interactive way. You virtually milk a cow, press the curds yourself and discover step by step how smell and taste develop. The highlight is the tasting room, where you can smell and taste, side by side, how young, mature and old cheeses differ from each other. No wonder the Gouda Cheese Experience made the news twice recently. Visitors from all over the world discover that a visit to Gouda is not just about tasting, but also smelling. It makes the experience richer and more surprising.

The lively tradition of the cheese market

The smell of Gouda is also part of the city itself. Cheeses have been traded here at the famous cheese market since the 14th century. The age-old handclapping ritual, in which buyer and seller slapped hands to confirm the price, took place between piles of cheeses that permeated the whole market with their smell. Even today, you can experience this lively tradition during the summer months: the smell of hundreds of cheeses, the music and the colourful cheese carriers bring history back to life.

Did you know that smell drives your taste experience?

About 80% of what we call "taste" actually comes from our nose. That explains why a young cheese often seems sweeter if you pay attention to its fresh smell, while an old variety seems spicier once you consciously perceive its full flavours. At the Gouda Cheese Experience, you will discover how smell and taste are each other's partners and how smelling them can help you enjoy them even more.
